Grape variety : 100% sauvignon fié gris

Soil : clay on limestone in tufa

Method of grape harvest : Mechanics, in the morning very early to have a fresh grape harvest (max: 10°c)

Vinification : Pressurage in pneumatic press from the harvest, *débourbage cold statics (6°c 24 hours later), low temperature fermentation, breeding on fine dregs, stabilization, clarification, bottling in spring.

Tasting :

This wine made from semi-dry wine has a golden and sparkling color. Its fruity and floral nose, announces all the sweetness of the mouth and its notes of "barley sugars". It is a true delicacy with a subtle sweetness. The tuffeau floors bring a very nice balance in the mouth.

Soil : Argilo calcaire sur tuffeau

Method of grape harvest : Manual and late (approximately 4 weks after the end of classic harvest)

Vinification : Pressing in pneumatic press from the harvest, *débourbage cold statics (6°c 24 hours later), put in barrel, natural and long low-temperature fermentation (approximately 6 months), natural stop of the fermentation, clarification, bottling in spring.

Tasting :

With its beautiful straw color, its daring, complex nose with candied and cooked fruit aromas, it is a harmonious wine. The palate is generous, fine, followed by a beautiful honey finish. It expresses its roundness and fullness today, and for many years.
