Sauvignon Fié Demi-Sec:

Grape variety : 100% sauvignon fié gris

Yield : 25hl / ha

Soil : Argilo calcaire sur tuffeau

Method of grape harvest : Mechanics, in the morning very early to have a fresh grape harvest (max : 10°c)

Vinification : Pressurage in pneumatic press from the harvest, *débourbage cold statics ( 6°c 24 hours later), low temperature fermentation, breeding on fine dregs, stabilization, clarification, bottling in spring.

Tasting : This cuvée Miss Fié, wink of eye in the 1st creation of Anne’s cuvée, arises from the grape variety sauvignon Fié gris, converted into wine in semi-dry. With a golden, glittering dress, this wine has a beautiful concentration of material while being brilliant and crystal clear. In the nose, we find aromas of white flowers as well as notes of « barley sugar ». In mouth, the wine is a real greed with a beautiful lengh and a sweetness.

Temperature of service : 12°c

Conservation : Ready to be drunk but with a high aging potential. Open the bottle ½ hour before serving.

Douceur d'Automne

AOC TOURAINE
Chenin moelleux « Douceur d'Automne »

Grape variety : 100% Chenin

Yield : 18hl / ha

Soil : Argilo calcaire sur tuffeau

Method of grape harvest : Manual and late (approximately 4 weks after the end of classic harvest)

Vinification : Pressing in pneumatic press from the harvest, *débourbage cold statics (6°c 24 hours later), put in barrel, natural and long low-temperature fermentation (approximately 6 months), natural stop of the fermentation, clarification, bottling in spring.

Tasting : Cuvée stemming from late harvests (chenin). Wit hits beautiful straw color, its generous, pleasant, complex nose in the aromas of candied and cooked fruits, it offers a generous, fine mouth, followed by a beautiful final of honey and will accompany apéritifs, Foie gras, dishes, desserts and chocolate. It expresses its curvature and its plenitude today and for numerous years.
