Vinification : Pressing in pneumatic press from the harvest, *débourbage* cold statics (6°c 24 hours later), at low temperature fermentation, breeding on fine dregs, stabilization, clarification, bottling in spring.

Tasting :

Its light yellow color, its powerful nose releasing a complexity of aromas (white fruits, grapefruit, exotic fruits), Sauvignon is long and fat in mouth and expresses all its freshness and fruity sound.

Agreements dish / wines : Sea food, fish with melting flesh, chicken, vegetable pies, charcuteries, goat cheese.

Temperature of service : 10°C

Age growing : 1- 3 years, must be drink fastly to enjoy its youngness

Tasting :

The oldest grape of the Loire, Pineau d'Aunis gives a dry and light rosé wine, very fruity and surprisingly fresh. Its salmon color is as pleasant as its slightly peppery character. An atypical rosé to discover to its guests on dishes from the world cuisine: Asian, Oriental and Mediterranean.

Vinification : Maceration of grapes in inox vat for one week, then pressing in pneumatic press, regulation of fermentation temperatures, aging on fine lees, stabilization, clarification, bottling in Spring.

Tasting :

Its fresh and subtly tannic mouth, gives this wine, lightness and elegance. Its ruby-red color reflects its surprising game of red fruit aromas: raspberry, strawberry. It is the wine of a whole meal, which will delight all of your guests, from the beginning to the end.

Agreements dish / wines : Charcuteries, grilled meats, white meats, poultry, cheeses, red fruit pie, chocolate mousse.

The Côt or "Malbec" is an old grape, formerly widespread on the slopes of the Cher. From a vine of more than 30 years, this vintage, with its purple color, expresses captivating aromas of blackcurrant then blueberries, blackberries and violets. This wine is subtle, honest and sincere

Method of grape harvest: : mechanics

Vinification : Maceration of grapes in inox vat for 10-12 days, then pressing in pneumatic press, regulation of fermentation temperatures, aging on fine dregs, stabilization, clarification, bottling in September.

Tasting :

This sweet and authentic wine releases a nose of fresh fruit from the woods. Its round mouth is free of vanilla aromas and remains slightly woody. This wine was briefly aged in barrels to soften the tannins. It is an airy wine and has a nice structure, to contrast the lightness of Loire wines.

Agreements dish / wines : high ripening cheese (Selles sur Cher, Cantal, Sainte Maure de Touraine), duck breast, veal, beef on grill, chocolate cake, game (pigeon with grapes, quail).
